That depends on how charred you like it! I usually go until the outside is golden brown.

No, but they're best made over fire, and bonfires are kind of an autumn thing!

Seem like they'd be good in winter too.

Probably! But I think a lot of people do them in autumn because it's just cold enough that the fire is nice, but not so cold that you want to go inside, like it sometimes is during winter.
